Organic farming is the guiding principle behind Highbank Wines. In Australia, very few vineyards are organic. But American winemaker Dennis Vice refuses to use chemicals or insecticides in his vineyard. He hand prunes the vines, thins the crop--not just once during the growing season--but several times. All the grapes are harvested by hand.
Coonawarra has the ideal climate for growing fine wine grapes and a long, slow, cool ripening season ensures that the grapes build up intense flavors. This produces more elegant wines, not overripe or overpowering wines. |
