| Champagne Taittinger: A Walk Through the Cellars |

The roots of Taittinger date back to 1734, when Champagne merchant Jacques Fourneaux established his company. The business prospered through the 19th century, ultimately Fourneaux-Forest merged with the Taittinger family, who retained control.
Join us as we accompany Cellarmaster Loïc Dupont through the famous Taittinger cellars, located in Reims on the site of Gallo-Roman chalk mines dug during the 4th century, and enlarged in the 13th century by the Saint Nicaise Abbey monks to provide storage for the Champagne wines which they traded in. Remains of the Abbey, which was destroyed during the French Revolution, are still visible today throughout the tunnels, in an excellent state of preservation.

| Biodynamic viticulture at Cape Jaffa Wines |

Cape Jaffa is home to the first fully certified biodynamic vineyard on the Limestone Coast, and is arguably the largest fully certified biodynamic operation in South Australia with 25 hectares under management. At Cape Jaffa, biodynamic winegrowing means seeking alternate means to controlling pests and increase microbial life in the soil. Weeds are controlled by mowing and grazing sheep, fungi are prevented using milk sprays and biodynamic preparations, and a balanced soil environment is encouraged by spraying natural products which also builds plant strength and controls disease. Vineyard operations are also timed according to nature's rhythm, coinciding with specific phases of the moon to increase their effect. The results are more regionally distinct and terroir-driven wines, beautifully capturing the rugged character of Cape Jaffa's coastal vineyards. |
